Vegan Banana Bread
This is a very forgiving, but delicious recipe for a sweet bread using overripe banana’s.
Ingredients
- 2 Cups Flour
- 1⁄2 Cups White Sugar
- 1⁄2 Cups Brown Sugar
- 3 Tsp Baking Powder
- 1 Tsp Ground Cinnamon
- Salt
- 1 Tsp Vanilla
- 1 1⁄2 Cups Mashed Overripe Banana
- 1⁄2 Cup Oat Milk
- 1⁄4 Cup Coconut Oil
Instructions
Preheat your oven to 350 degrees. And, spray a 9x5 inch bread pan with cooking oil and a piece of parchment paper to assist lifting the loaf out.
Then, in a medium-sized bowl, mix together the dry ingredients: flour, white & brown sugar, baking powder, cinnamon & salt.
You should sift the flour and sugars, but this recipe is so forgiving that I haven’t had issues skipping the sifting.
Next, in a different bowl, mix the wet ingredients well: banana, oat milk, coconut oil, and vanilla.
Now mix the wet ingredients into the dry. Fold them together until the batter is fully combined. Then add it into pan.
Bake the loaf for 60 minutes at 350 degrees, or until a toothpick comes out clean. Let the loaf sit in the pan for 10 minutes. Then remove & place on a cooling rack to cool fully before slicing.
