Cream of Mushroom Sauce
This sauce is a rich and delicious pairing for rice or pasta. And it’s dead simple.
Ingredients
- 1lb Mushrooms
- 1 Red Onion
- Salt
- 2 Tbsp Thyme
- 4 Cloves of Garlic
- 1 14oz Can Coconut Milk
Steps
First, dice your onion and roughly chop the mushroom. Add these and salt to a large pan and saute on medium until caramelized.
It takes a long time, but your patience will be rewarded. Once the mixture starts to stick, deglaze periodically with a small amount of water (1/8th-1/4th cup).
While that is cooking, crush or finely dice the garlic.
Once the onion and mushrooms are caramelized, add the garlic and thyme. Let cook for 30 seconds until aromatic. Then, add the can of coconut milk and stir frequently until reduced about half, remaining on medium / medium-low.
That’s it! Serve it as a sauce for your favorite starch: rice, pasta, or potatoes.
